For all the alternative health trolls who say that herbs, like garlic, ginger, and fresh green herbs and peppers can't cure or reverse diseases:
Well, unbelievable, but true. My 80 year old mother moved here to live with me Nov. 98. She was on varapomil (sp?) and Zocor for heart and cholesterol problems. Was on them for decades. I eat lots of fresh herbs that I grow, and garlic, daily. About six months the doc took her off varapomil and this week, off Zocor. She just doesn't need them anymore. How many times have you heard of an 80-year-old being taken *off* medicine? :-)
Funny, the doc said now that you're off Zocor, I want you to take 800 units/Vit E daily, lots of garlic, and lecethin. The doc didn't know that practically every day we have lots of raw garlic in one of three favorite garlic dipping sauces -- Argentinian chimichurri, Chinese soy, or Vietnamese fish sauce. We also eat lots of cooked garlic, in my italian recipes, etc. BTW, I am a gourmet cook who does not skimp on using butter, cream, etc. I truly believe the garlic, ginger, and esp. members of the Labiatae family contribute to good health.
Her cholesterol dropped from 240 to 180. Anyway, thought I'd share my three sauces with you. Totally addictive. You can put them on *anything*, from fish to mashed potatoes, depending on your whim.
- Vietnamese Hot and Sweet Sauce
- 4 oz. fish sauce
juice of two reg. limes or four Key limes
3 T. brown sugar
2 or 3 hot peppers, finely chopped (I'm using Seranno right now, from my garden)
4-5 cloves garlic, finely chopped.
little water to dilute, if too strong.
- Chimichurri - Argentinian marinade/dipping sauce
- 1/2 cup Italian parsley, finely chopped
1/2 onion, finely chopped
1/2 cup virgin olive oil (don't have to use extra virgin, save money)
1/4 cup white wine vinegar
6 cloves garlic, finely chopped
1/2 t. saffron threads, chopped finely and soaked in vinegar, if so desired) optional
1/2 green pepper, finely chopped, optional
juice of one lemon, optional
- Chinese Soy Yum Yum Sauce
- 1 C soy sauce
1/4 cup white vinegar
8 cloves garlic, finely chopped
ginger, finely grated or chopped, about the size of your thumb -- be generous
1/4 cup Chinese hot oil -- made by heating reg. oil in a pan, adding cayenne. Strain.
Of course, all these measurements are approx, I wing it as I prepare them. Sometimes I add cilantro to any one of them, it's so versatile.
That's it, the basic fuel of the McCoy household. (We spend a *lot* on Breath Assure).
Me? I haven't had a cold or flu in 25 years, good cholesterol and blood pressure counts, and I attribute it to the use of herbs and garlic all these years.
